Creamy Potato Celery Soup With Croutons

  • 1 lb potatoes
  • 1 onion
  • 1 stalk celery
  • 1 ½ cups white stock
  • ½ cup cream or milk
  • Salt and pepper to taste
  • Fried bread croutons for serving

Method

  1. 1 Peel potatoes and slice them, along with the onion and celery, into thin slices.
  2. 2 Place vegetables in white stock and simmer gently until tender.
  3. 3 Rub the mixture through a fine sieve or tammy cloth to create a smooth purée.
  4. 4 Stir in cream or milk and heat through. Season with salt and pepper.
