Creamy Potato Celery Soup With Croutons
Ingredients
- 1 lb potatoes
- 1 onion
- 1 stalk celery
- 1 ½ cups white stock
- ½ cup cream or milk
- Salt and pepper to taste
- Fried bread croutons for serving
Method
- 1 Peel potatoes and slice them, along with the onion and celery, into thin slices.
- 2 Place vegetables in white stock and simmer gently until tender.
- 3 Rub the mixture through a fine sieve or tammy cloth to create a smooth purée.
- 4 Stir in cream or milk and heat through. Season with salt and pepper.
- 5 Serve hot with fried bread croutons.
