Creamy Potato And Root Vegetable Soup

Ingredients

  • 4 large potatoes
  • 1 tbsp butter
  • Boiling milk
  • 1 tbsp turnips, diced
  • 2 tbsp carrots, diced
  • Cayenne pepper
  • Salt
  • ¼ cup cream
  • 1 egg yolk
  • Fried croutons

Method

  1. 1 Peel and boil potatoes in water until tender. Mash very fine with 1 tablespoon of butter.
  2. 2 Boil diced turnips and carrots in a small amount of water until tender.
  3. 3 Add the boiled vegetables to the mashed potatoes. Stir in enough boiling milk to reach the desired consistency.
  4. 4 Season with cayenne and salt to taste.
  5. 5 Remove soup from heat. Whisk cream and egg yolk together, then stir into the soup. Serve immediately with fried croutons.
