Creamy Potato And Root Vegetable Soup
Ingredients
- 4 large potatoes
- 1 tbsp butter
- Boiling milk
- 1 tbsp turnips, diced
- 2 tbsp carrots, diced
- Cayenne pepper
- Salt
- ¼ cup cream
- 1 egg yolk
- Fried croutons
Method
- 1 Peel and boil potatoes in water until tender. Mash very fine with 1 tablespoon of butter.
- 2 Boil diced turnips and carrots in a small amount of water until tender.
- 3 Add the boiled vegetables to the mashed potatoes. Stir in enough boiling milk to reach the desired consistency.
- 4 Season with cayenne and salt to taste.
- 5 Remove soup from heat. Whisk cream and egg yolk together, then stir into the soup. Serve immediately with fried croutons.
