Creamy Poached Oysters On Toast
Ingredients
- 1 pint solid oysters
- 4 tablespoons butter
- 1 tablespoon lemon juice
- 1 scant teaspoon salt
- A few grains cayenne
- 2 egg yolks, beaten
Method
- 1 Place oysters in a chafing dish or blazer and heat until plump and edges curl.
- 2 Add butter, lemon juice, salt, and cayenne to the oysters and heat through.
- 3 Temper the beaten egg yolks by slowly stirring in a few spoonfuls of the hot oyster liquor.
- 4 Pour the yolk mixture back into the chafing dish and stir constantly until the sauce thickens.
- 5 Serve immediately over thin slices of buttered toast or crackers.
