Creamy Poached Oysters On Toast

Ingredients

  • 1 pint solid oysters
  • 4 tablespoons butter
  • 1 tablespoon lemon juice
  • 1 scant teaspoon salt
  • A few grains cayenne
  • 2 egg yolks, beaten

Method

  1. 1 Place oysters in a chafing dish or blazer and heat until plump and edges curl.
  2. 2 Add butter, lemon juice, salt, and cayenne to the oysters and heat through.
  3. 3 Temper the beaten egg yolks by slowly stirring in a few spoonfuls of the hot oyster liquor.
  4. 4 Pour the yolk mixture back into the chafing dish and stir constantly until the sauce thickens.
  5. 5 Serve immediately over thin slices of buttered toast or crackers.
