Creamy Peanut Soup

Ingredients

  • 1 cup peanuts, skin removed
  • 1 pint milk
  • 1 tablespoon butter
  • 1 tablespoon flour
  • Salt and pepper to taste

Method

  1. 1 Pound the peanuts into a smooth paste.
  2. 2 Scald the milk in a saucepan.
  3. 3 Melt butter and mix with flour to form a roux.
  4. 4 Slowly add the roux to the milk and peanut paste.
  5. 5 Cook until thickened and season to taste.
