Creamy Pea Soup With Mint
Ingredients
- 1 pint green peas
- 2 egg yolks
- ½ cup cream
- 1 ½ cups stock
- Salt and pepper to taste
- Mint sprig (optional)
Method
- 1 Strain the liquid from the peas and reserve.
- 2 Combine peas and stock in a saucepan; simmer for 20 minutes.
- 3 Pass the mixture through a sieve back into the pan.
- 4 Stir in egg yolks, cream, salt, and pepper over heat until thickened.
- 5 Do not allow the puree to boil.
- 6 Optional: Boil a mint sprig with the peas for added flavor.
