Creamy Pea And Sorrel Soup With Rice
Ingredients
- 1 ½ cups fresh peas or dried peas (soaked 6 hours)
- 1 leek, chopped finely
- 3 onions, chopped finely
- Fresh sorrel, chopped (to taste)
- 5 tablespoons rice
Method
- 1 Simmer peas, leek, and onions in water until peas are tender.
- 2 Pass the mixture through a sieve to create a smooth base.
- 3 Cook the rice separately until tender.
- 4 Add the cooked rice and chopped sorrel to the soup base.
- 5 Simmer again, stirring well, until heated through and green.
