Creamy Pea And Sorrel Soup With Rice

  • 1 ½ cups fresh peas or dried peas (soaked 6 hours)
  • 1 leek, chopped finely
  • 3 onions, chopped finely
  • Fresh sorrel, chopped (to taste)
  • 5 tablespoons rice

Method

  1. 1 Simmer peas, leek, and onions in water until peas are tender.
  2. 2 Pass the mixture through a sieve to create a smooth base.
  3. 3 Cook the rice separately until tender.
  4. 4 Add the cooked rice and chopped sorrel to the soup base.
  5. 5 Simmer again, stirring well, until heated through and green.
