Creamy Pea And Lettuce Soup
Ingredients
- 1 cup fresh peas
- 2 young onions, halved
- parsley stems
- 2 tbsp butter, divided
- 1 cup soup stock
- 2 whole hearts of lettuce
- salt and pepper
- 1 tbsp flour
- additional broth as needed
- 2 egg yolks
Method
- 1 Tie parsley stems inside halved onions. Brown onions in butter in a pot.
- 2 Add soup stock and simmer until onions soften. Rub onions and liquid through a sieve back into the pot.
- 3 Add peas, lettuce, salt, and pepper. Simmer until peas are half cooked.
- 4 Mix flour with butter and stir into the pot. Add more broth if needed.
- 5 Whisk egg yolks with a little broth, then stir into the pot to thicken. Serve immediately.
