Creamy Pea And Lettuce Soup

Ingredients

  • 1 cup fresh peas
  • 2 young onions, halved
  • parsley stems
  • 2 tbsp butter, divided
  • 1 cup soup stock
  • 2 whole hearts of lettuce
  • salt and pepper
  • 1 tbsp flour
  • additional broth as needed
  • 2 egg yolks

Method

  1. 1 Tie parsley stems inside halved onions. Brown onions in butter in a pot.
  2. 2 Add soup stock and simmer until onions soften. Rub onions and liquid through a sieve back into the pot.
  3. 3 Add peas, lettuce, salt, and pepper. Simmer until peas are half cooked.
  4. 4 Mix flour with butter and stir into the pot. Add more broth if needed.
  5. 5 Whisk egg yolks with a little broth, then stir into the pot to thicken. Serve immediately.
