Creamy Pea And Cabbage Soup
Ingredients
- 1 onion
- 1 quart dried peas
- 3 quarts water
- 2 cabbage lettuces, sliced
- 1/2 pint fresh peas
- salt to taste
- butter and flour (for thickening)
Method
- 1 Boil the onion and dried peas in 3 quarts of water until soft.
- 2 Work the mixture through a fine sieve to create a smooth pulp.
- 3 Return the pulp to the cooking water, add sliced cabbage lettuces, fresh peas, and salt.
- 4 Boil quickly for 30 minutes.
- 5 Mix butter and flour into a paste and stir into the soup to thicken.
