Creamy Pea And Cabbage Soup

Ingredients

  • 1 onion
  • 1 quart dried peas
  • 3 quarts water
  • 2 cabbage lettuces, sliced
  • 1/2 pint fresh peas
  • salt to taste
  • butter and flour (for thickening)

Method

  1. 1 Boil the onion and dried peas in 3 quarts of water until soft.
  2. 2 Work the mixture through a fine sieve to create a smooth pulp.
  3. 3 Return the pulp to the cooking water, add sliced cabbage lettuces, fresh peas, and salt.
  4. 4 Boil quickly for 30 minutes.
  5. 5 Mix butter and flour into a paste and stir into the soup to thicken.
