Creamy Parsnip Soup With Fried Croutons

Ingredients

  • 2 quarts stock
  • 2 lb parsnips
  • ½ cup cream
  • Pepper and salt to taste
  • Bread for fried croutons

Method

  1. 1 Slice the parsnips and add them to boiling stock.
  2. 2 Simmer for one hour or more until the parsnips are quite tender.
  3. 3 Rub the soup through a wire sieve to smooth it.
  4. 4 Stir in the cream, pepper, and salt to taste.
  5. 5 Return to a clean stewpan and boil up once more.
  6. 6 Serve with fried bread croutons.
