Creamy Parsnip Soup With Fried Croutons
Ingredients
- 2 quarts stock
- 2 lb parsnips
- ½ cup cream
- Pepper and salt to taste
- Bread for fried croutons
Method
- 1 Slice the parsnips and add them to boiling stock.
- 2 Simmer for one hour or more until the parsnips are quite tender.
- 3 Rub the soup through a wire sieve to smooth it.
- 4 Stir in the cream, pepper, and salt to taste.
- 5 Return to a clean stewpan and boil up once more.
- 6 Serve with fried bread croutons.
