Ingredients

  • 1 cup fish stock (court bouillon)
  • 1/2 cup milk
  • 3 tablespoons cornstarch
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon grated onion
  • 1 well-beaten egg

Method

  1. 1 Dissolve cornstarch in milk, then add fish stock.
  2. 2 Bring mixture to a boil and cook slowly for 8 minutes.
  3. 3 Stir in butter, salt, paprika, and grated onion.
  4. 4 Beat in the well-beaten egg to mix thoroughly.
  5. 5 Heat gently until warm but do not boil.
  6. 6 Serve immediately over boiled fish.
