Creamy Oysters With Madeira Sauce
Ingredients
- 2 tablespoons butter
- 1 tablespoon flour
- ½ cup milk
- 1 teaspoon salt
- dash of cayenne pepper
- 25 oysters, washed and drained
- 2 tablespoons Madeira wine
Method
- 1 Melt butter in a saucepan and stir in flour to make a roux.
- 2 Add milk, salt, and cayenne, stirring constantly until the sauce is smooth and thickened.
- 3 Add the washed and drained oysters and cook until heated through.
- 4 Remove from heat and stir in the Madeira wine before serving.
