Creamy Oysters With Madeira Sauce

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon flour
  • ½ cup milk
  • 1 teaspoon salt
  • dash of cayenne pepper
  • 25 oysters, washed and drained
  • 2 tablespoons Madeira wine

Method

  1. 1 Melt butter in a saucepan and stir in flour to make a roux.
  2. 2 Add milk, salt, and cayenne, stirring constantly until the sauce is smooth and thickened.
  3. 3 Add the washed and drained oysters and cook until heated through.
  4. 4 Remove from heat and stir in the Madeira wine before serving.
