Creamy Oysters Newburg On Toast

Ingredients

  • 1 pint oysters
  • 1/2 cup cream
  • 1 tsp onion juice
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/8 tsp paprika
  • 2 tbsp flour
  • 1 tsp lemon juice
  • 1 egg yolk
  • Toasted bread for serving

Method

  1. 1 Melt 1 tbsp butter in a skillet. Add oysters, salt, paprika, onion juice, and lemon juice. Cook for 3 minutes.
  2. 2 In a separate pan, melt the remaining 1 tbsp butter. Whisk in flour until blended.
  3. 3 Stir in cream and bring to a simmer. Remove from heat and whisk in the beaten egg yolk.
  4. 4 Pour the sauce over the oysters and mix gently. Serve immediately over toasted bread.
