Creamy Oysters Newburg On Toast
Ingredients
- 1 pint oysters
- 1/2 cup cream
- 1 tsp onion juice
- 2 tbsp butter
- 1/2 tsp salt
- 1/8 tsp paprika
- 2 tbsp flour
- 1 tsp lemon juice
- 1 egg yolk
- Toasted bread for serving
Method
- 1 Melt 1 tbsp butter in a skillet. Add oysters, salt, paprika, onion juice, and lemon juice. Cook for 3 minutes.
- 2 In a separate pan, melt the remaining 1 tbsp butter. Whisk in flour until blended.
- 3 Stir in cream and bring to a simmer. Remove from heat and whisk in the beaten egg yolk.
- 4 Pour the sauce over the oysters and mix gently. Serve immediately over toasted bread.
