Creamy Oyster Stew On Toast

Ingredients

  • 1 quart oysters
  • 1 cup cream
  • Salt and red pepper to taste
  • 2 tablespoons butter
  • 1 teaspoon flour
  • Cold milk
  • Juice of half a lemon
  • Buttered toast slices

Method

  1. 1 Drain oysters and heat the liquor in a saucepan. Stir in flour mixed with a little cold milk until smooth.
  2. 2 Add cream, salt, red pepper, and butter. Cook and stir until the mixture thickens.
  3. 3 Add oysters and simmer until edges curl. Remove from heat and stir in lemon juice.
  4. 4 Pour the stew over thin slices of buttered toast and serve immediately.
