Creamy Oyster Stew On Toast
Ingredients
- 1 quart oysters
- 1 cup cream
- Salt and red pepper to taste
- 2 tablespoons butter
- 1 teaspoon flour
- Cold milk
- Juice of half a lemon
- Buttered toast slices
Method
- 1 Drain oysters and heat the liquor in a saucepan. Stir in flour mixed with a little cold milk until smooth.
- 2 Add cream, salt, red pepper, and butter. Cook and stir until the mixture thickens.
- 3 Add oysters and simmer until edges curl. Remove from heat and stir in lemon juice.
- 4 Pour the stew over thin slices of buttered toast and serve immediately.
