Creamy Oyster Soup With Thyme
Ingredients
- 1 dozen oysters
- 1 tablespoon butter
- 1 pinch thyme
- 2 ½ cups milk
Method
- 1 Drain oysters, reserving the liquid. Wash oysters carefully to remove any shell fragments.
- 2 Chop oysters finely and return them to the reserved oyster liquid in a saucepan.
- 3 Add butter and a pinch of thyme to the saucepan. Heat gently to the scalding point.
- 4 Add 2 ½ cups of scalding hot milk. Bring to a boil, then remove from heat and serve immediately.
