Creamy Oyster Soup With Thyme

Ingredients

  • 1 dozen oysters
  • 1 tablespoon butter
  • 1 pinch thyme
  • 2 ½ cups milk

Method

  1. 1 Drain oysters, reserving the liquid. Wash oysters carefully to remove any shell fragments.
  2. 2 Chop oysters finely and return them to the reserved oyster liquid in a saucepan.
  3. 3 Add butter and a pinch of thyme to the saucepan. Heat gently to the scalding point.
  4. 4 Add 2 ½ cups of scalding hot milk. Bring to a boil, then remove from heat and serve immediately.
