Creamy Oyster Filling
Ingredients
- 1 dozen oysters
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk or cream
- 2 egg yolks
- Dash of cayenne
- Dash of mace
Method
- 1 Scald oysters in their liquor, then drain and cut each oyster into four pieces.
- 2 Melt butter in a saucepan, add flour, and cook without browning.
- 3 Stir in milk or cream and seasonings; cook until smooth.
- 4 Remove from heat, cool slightly, then stir in beaten egg yolks.
- 5 Return to heat and stir until thickened, then fold in the oyster pieces.
