Creamy Oyster Filling

Ingredients

  • 1 dozen oysters
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk or cream
  • 2 egg yolks
  • Dash of cayenne
  • Dash of mace

Method

  1. 1 Scald oysters in their liquor, then drain and cut each oyster into four pieces.
  2. 2 Melt butter in a saucepan, add flour, and cook without browning.
  3. 3 Stir in milk or cream and seasonings; cook until smooth.
  4. 4 Remove from heat, cool slightly, then stir in beaten egg yolks.
  5. 5 Return to heat and stir until thickened, then fold in the oyster pieces.
