Creamy Oyster Chowder With Crackers
Ingredients
- 50 stewing oysters
- 2 tablespoons butter
- 4 pints milk
- 1 pint oyster liquid
- 1/2 cup flour
- 2 tablespoons finely minced parsley
- 1 teaspoon grated onion
- 1 1/2 teaspoons salt
- 1/2 teaspoon white pepper
- Old-fashioned water crackers for serving
Method
- 1 Strain the juice from the oysters, removing any shell bits. Wash the oysters and place them in a saucepan with butter.
- 2 In a large saucepan, combine milk, oyster liquid, and flour. Stir to dissolve the flour thoroughly.
- 3 Bring the mixture quickly to a boil. Scald the oysters separately, then add them to the milk along with parsley, onion, salt, and pepper.
- 4 Simmer slowly for a few minutes. Serve with water crackers.
