Creamy Oyster Chowder With Crackers

  • 50 stewing oysters
  • 2 tablespoons butter
  • 4 pints milk
  • 1 pint oyster liquid
  • 1/2 cup flour
  • 2 tablespoons finely minced parsley
  • 1 teaspoon grated onion
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon white pepper
  • Old-fashioned water crackers for serving

Method

  1. 1 Strain the juice from the oysters, removing any shell bits. Wash the oysters and place them in a saucepan with butter.
  2. 2 In a large saucepan, combine milk, oyster liquid, and flour. Stir to dissolve the flour thoroughly.
  3. 3 Bring the mixture quickly to a boil. Scald the oysters separately, then add them to the milk along with parsley, onion, salt, and pepper.
  4. 4 Simmer slowly for a few minutes. Serve with water crackers.
