Creamy Oyster Canapes On Toast
Ingredients
- 1 cup cream
- 2 tbsp fine-grated bread crumbs
- 1 tbsp butter
- dash of paprika
- grating of nutmeg
- 2 dozen oysters, washed, drained and chopped
- butter for toast
- toast rounds
- olives, pimientos, or gherkins for serving
Method
- 1 Scald 1 cup of cream in a saucepan.
- 2 Stir in 2 tbsp bread crumbs, 1 tbsp butter, a dash of paprika, and a grating of nutmeg.
- 3 Add 2 dozen washed, drained, and chopped oysters. Stir gently until heated through, but do not boil.
- 4 Spread butter on toast rounds, then top with the warm oyster mixture.
- 5 Serve immediately with olives, pimientos, or gherkins.
