Creamy Oyster Canapes On Toast

Ingredients

  • 1 cup cream
  • 2 tbsp fine-grated bread crumbs
  • 1 tbsp butter
  • dash of paprika
  • grating of nutmeg
  • 2 dozen oysters, washed, drained and chopped
  • butter for toast
  • toast rounds
  • olives, pimientos, or gherkins for serving

Method

  1. 1 Scald 1 cup of cream in a saucepan.
  2. 2 Stir in 2 tbsp bread crumbs, 1 tbsp butter, a dash of paprika, and a grating of nutmeg.
  3. 3 Add 2 dozen washed, drained, and chopped oysters. Stir gently until heated through, but do not boil.
  4. 4 Spread butter on toast rounds, then top with the warm oyster mixture.
  5. 5 Serve immediately with olives, pimientos, or gherkins.
