Creamy Oyster And Ham Chowder
Ingredients
- 2 quarts oysters, washed and drained
- 3 quarts water
- 3 onions, chopped
- 2-3 slices lean ham
- Salt and pepper to taste
- 1 quart fresh oysters
- 4 tablespoons flour
- 1 cup rich cream
- 6 egg yolks, beaten
- Fresh thyme (optional)
Method
- 1 Combine 2 quarts oysters, water, onions, ham, salt, and pepper in a pot. Boil until liquid reduces by half.
- 2 Strain the broth through a sieve, returning the liquid to the pot. Add the 1 quart of fresh oysters and thyme if using.
- 3 Boil until oysters are cooked. Whisk flour and cream into the beaten egg yolks, then stir into the soup.
- 4 Simmer briefly to thicken, ensuring it does not curdle or boil vigorously. Serve immediately.
