  • 2 quarts oysters, washed and drained
  • 3 quarts water
  • 3 onions, chopped
  • 2-3 slices lean ham
  • Salt and pepper to taste
  • 1 quart fresh oysters
  • 4 tablespoons flour
  • 1 cup rich cream
  • 6 egg yolks, beaten
  • Fresh thyme (optional)

Method

  1. 1 Combine 2 quarts oysters, water, onions, ham, salt, and pepper in a pot. Boil until liquid reduces by half.
  2. 2 Strain the broth through a sieve, returning the liquid to the pot. Add the 1 quart of fresh oysters and thyme if using.
  3. 3 Boil until oysters are cooked. Whisk flour and cream into the beaten egg yolks, then stir into the soup.
  4. 4 Simmer briefly to thicken, ensuring it does not curdle or boil vigorously. Serve immediately.
