Creamy Onion Soup With Egg Yolks

Ingredients

  • 2 tablespoons butter
  • 4 large onions, peeled and sliced
  • 1 tablespoon all-purpose flour
  • 1 ½ cups boiling milk
  • Salt and black pepper to taste
  • 2 egg yolks
  • ½ cup heavy cream

Method

  1. 1 Melt butter in a large pot over medium heat. Add sliced onions and simmer for 30 minutes without browning.
  2. 2 Stir in flour and cook until thickened. Gradually pour in boiling milk while stirring constantly.
  3. 3 Season with salt and pepper. Press the soup through a fine-mesh sieve back into the pot and heat gently.
  4. 4 Whisk egg yolks and cream in a separate bowl. Temper by slowly adding hot soup to the egg mixture.
  5. 5 Remove soup from heat and stir in the egg mixture. Serve immediately in a tureen.
