Creamy Onion Soup With Egg Yolks
Ingredients
- 2 tablespoons butter
- 4 large onions, peeled and sliced
- 1 tablespoon all-purpose flour
- 1 ½ cups boiling milk
- Salt and black pepper to taste
- 2 egg yolks
- ½ cup heavy cream
Method
- 1 Melt butter in a large pot over medium heat. Add sliced onions and simmer for 30 minutes without browning.
- 2 Stir in flour and cook until thickened. Gradually pour in boiling milk while stirring constantly.
- 3 Season with salt and pepper. Press the soup through a fine-mesh sieve back into the pot and heat gently.
- 4 Whisk egg yolks and cream in a separate bowl. Temper by slowly adding hot soup to the egg mixture.
- 5 Remove soup from heat and stir in the egg mixture. Serve immediately in a tureen.
