Creamy Onion And Rice Soup
Ingredients
- 4 onions
- 3 oz rice
- 1.5 oz butter
- 3 pints water
- Salt and pepper to taste
- 1 tbsp finely chopped parsley (optional)
Method
- 1 Chop onions very finely. Melt butter in a pot and fry onions until slightly browned.
- 2 Add rice, salt, pepper, and water to the pot.
- 3 Simmer gently until the rice and onions are quite soft.
- 4 Stir in chopped parsley before serving, if desired.
