Creamy Onion And Potato Soup Over Toast

Ingredients

  • 2 tbsp butter
  • 1 cup soup stock
  • 3 onions, thinly sliced
  • 1 1/2 cups flour
  • 1 cup boiling water
  • Salt and pepper to taste
  • 4 cups boiling milk
  • 3 boiled potatoes, mashed
  • Toasted bread, cut into diamonds

Method

  1. 1 Melt butter in a saucepan. Add soup stock and sliced onions. Cook until very hot.
  2. 2 Stir in flour constantly to prevent burning. Add boiling water, salt, and pepper; boil for one minute.
  3. 3 Remove from heat. Gradually stir a little hot soup into the mashed potatoes until smooth.
  4. 4 Return potato mixture to the pot. Stir in boiling milk and strain the soup.
  5. 5 Place toasted bread diamonds in the bottom of a tureen. Pour hot soup over the bread and serve.
