Creamy Onion And Potato Soup Over Toast
Ingredients
- 2 tbsp butter
- 1 cup soup stock
- 3 onions, thinly sliced
- 1 1/2 cups flour
- 1 cup boiling water
- Salt and pepper to taste
- 4 cups boiling milk
- 3 boiled potatoes, mashed
- Toasted bread, cut into diamonds
Method
- 1 Melt butter in a saucepan. Add soup stock and sliced onions. Cook until very hot.
- 2 Stir in flour constantly to prevent burning. Add boiling water, salt, and pepper; boil for one minute.
- 3 Remove from heat. Gradually stir a little hot soup into the mashed potatoes until smooth.
- 4 Return potato mixture to the pot. Stir in boiling milk and strain the soup.
- 5 Place toasted bread diamonds in the bottom of a tureen. Pour hot soup over the bread and serve.
