Creamy Mushroom Toast

Ingredients

  • 1/2 lb mushrooms
  • Juice of 1/2 lemon
  • 1 tbsp butter
  • 1 slice onion
  • 1 sprig parsley
  • 1 clove
  • Water
  • Salt and pepper to taste
  • 1 egg yolk, beaten
  • 1/4 cup cream
  • Toast slices
  • Butter for toast
  • Hot milk for toast
  • Parsley for garnish

Method

  1. 1 Wash, stem, and skin the mushrooms, then cut into dice.
  2. 2 Place mushrooms in a saucepan with lemon juice, butter, onion slice, parsley sprig, and clove tied in a muslin bag.
  3. 3 Stew gently until nearly dry, then add water to cover, salt, and pepper; cook for 15 minutes.
  4. 4 Remove the herb bag, then stir in the beaten egg yolk and cream to thicken the sauce.
  5. 5 Butter toast slices and moisten with a little hot milk; arrange on a platter.
  6. 6 Pour the mushroom mixture over the toast, garnish with parsley, and serve hot.
