Creamy Mushroom Roast Chicken
Ingredients
- 1 tender chicken for roasting
- 1/2 cup Crisco
- Salt and pepper to taste
- 1 pint hot water
- 1 cup hot sweet cream
- 2 cups chopped mushrooms
- 1 tablespoon chopped parsley
Method
- 1 Clean chicken, split down back, and place breast upward in a casserole dish.
- 2 Spread Crisco over the breast, dust with salt and pepper, add hot water, cover closely, and cook in a hot oven (425°F) for one hour.
- 3 When nearly tender, add cream, mushrooms, and parsley. Cover and cook for twenty minutes longer.
- 4 Serve hot in the casserole.
