Creamy Mushroom Roast Chicken

Ingredients

  • 1 tender chicken for roasting
  • 1/2 cup Crisco
  • Salt and pepper to taste
  • 1 pint hot water
  • 1 cup hot sweet cream
  • 2 cups chopped mushrooms
  • 1 tablespoon chopped parsley

Method

  1. 1 Clean chicken, split down back, and place breast upward in a casserole dish.
  2. 2 Spread Crisco over the breast, dust with salt and pepper, add hot water, cover closely, and cook in a hot oven (425°F) for one hour.
  3. 3 When nearly tender, add cream, mushrooms, and parsley. Cover and cook for twenty minutes longer.
  4. 4 Serve hot in the casserole.
