Creamy Mushroom Purée With Toast
Ingredients
- 1 pint mushrooms
- 1 small onion
- Cold water
- 1 large piece butter
- 1 spoonful flour
- 2 lumps sugar
- 2 egg yolks, beaten
- 1 spoonful cream or rich milk
- Thin slices fried bread or toast
Method
- 1 Peel mushrooms, cut into pieces, and place in a pan with enough cold water to prevent burning. Add a small onion to test for spoilage; if the onion turns bluish-black, discard all mushrooms.
- 2 Stew mushrooms slowly until they lose all shape and become an undistinguishable mass. Strain the mixture.
- 3 In a stew-pan, melt butter (or cook flour) with sugar. Add the strained mushroom purée and stew for about five minutes.
- 4 Remove from heat and stir in beaten egg yolks and cream or rich milk. Serve in the center of a dish surrounded by slices of fried bread or toast.
