Creamy Mushroom And Parsley Eggs

Ingredients

  • 2 tbsp butter
  • 1 tbsp flour
  • 1 tsp finely minced parsley
  • 1 heaping tbsp fresh mushrooms, chopped very fine
  • 1 cup rich milk or cream
  • 4-5 hard-boiled eggs, cut into quarters lengthwise

Method

  1. 1 Melt butter in a skillet over medium heat. Stir in flour until smooth.
  2. 2 Add parsley, chopped mushrooms, and milk or cream. Cook until mushrooms are tender.
  3. 3 Add hard-boiled egg quarters. Bring to a boil and serve immediately.
