  • 1 cup mashed potatoes
  • 2 hard-boiled eggs
  • 2 tablespoons salad oil
  • 2 teaspoons sugar
  • 1 teaspoon mustard
  • Salt and pepper to taste
  • 2 tablespoons lemon juice
  • Watercress and beetroot for garnish
