Creamy Mashed Potato Salad With Beetroot
Ingredients
- 1 cup mashed potatoes
- 2 hard-boiled eggs
- 2 tablespoons salad oil
- 2 teaspoons sugar
- 1 teaspoon mustard
- Salt and pepper to taste
- 2 tablespoons lemon juice
- Watercress and beetroot for garnish
Method
- 1 Mash the egg yolks finely and mix smooth with the lemon juice to create a dressing.
- 2 Chop the egg whites very finely.
- 3 Combine the mashed potatoes, chopped egg whites, oil, sugar, mustard, salt, and pepper in a bowl.
- 4 Stir in the egg yolk and lemon juice dressing until well mixed.
- 5 Turn the mixture into a salad bowl or glass dish.
- 6 Garnish with watercress and sliced beetroot before serving.
