Creamy Mashed Fava Beans With Onions
Ingredients
- 1 lb shelled fava beans
- Water for boiling
- Salt
- Olive oil
- Onions, sliced
- Bacon lardons (optional)
- White wine (optional)
- Saffron (optional)
- Sugar (optional)
- Pepper (optional)
Method
- 1 Shell the fava beans and rinse them thoroughly to remove any skins or debris.
- 2 Boil the beans in fresh water until tender, about 20-30 minutes. Drain and rinse well.
- 3 Return beans to the pot with fresh water and salt. Simmer until very soft and thick.
- 4 Mash the beans vigorously with a wooden spoon or potato masher until smooth.
- 5 Thin the mixture with a little water or white wine to reach a creamy consistency.
- 6 Serve topped with sautéed onions in olive oil or crispy bacon lardons. Add pepper or saffron if desired.
