Creamy Mashed Fava Beans With Onions

  • 1 lb shelled fava beans
  • Water for boiling
  • Salt
  • Olive oil
  • Onions, sliced
  • Bacon lardons (optional)
  • White wine (optional)
  • Saffron (optional)
  • Sugar (optional)
  • Pepper (optional)

Method

  1. 1 Shell the fava beans and rinse them thoroughly to remove any skins or debris.
  2. 2 Boil the beans in fresh water until tender, about 20-30 minutes. Drain and rinse well.
  3. 3 Return beans to the pot with fresh water and salt. Simmer until very soft and thick.
  4. 4 Mash the beans vigorously with a wooden spoon or potato masher until smooth.
  5. 5 Thin the mixture with a little water or white wine to reach a creamy consistency.
  6. 6 Serve topped with sautéed onions in olive oil or crispy bacon lardons. Add pepper or saffron if desired.
