Creamy Marasmius Oreades Mushroom Sauce

Ingredients

  • 1 tbsp butter
  • 1 tsp flour
  • ½ cup water or milk
  • 1 pint Marasmius oreades mushrooms
  • Salt and pepper to taste
  • Buttered toast or meat for serving

Method

  1. 1 If mushrooms are dry, soak them in water briefly, then drain.
  2. 2 Melt 1 tbsp butter in a saucepan and bubble gently.
  3. 3 Add 1 tsp flour and cook for a few minutes without browning.
  4. 4 Stir in ½ cup water (for meat) or milk (for toast) until smooth.
  5. 5 Add the mushrooms and simmer for 15 minutes.
  6. 6 Season with salt and pepper, then pour over toast or meat.
