Creamy Lobster Newburg
Ingredients
- 4 tbsp butter
- 2 boiled lobsters, meat coarsely cut
- Salt and pepper to taste
- Grated nutmeg
- 2 tbsp sherry
- 4 egg yolks, beaten smooth
- 1 cup heavy cream
Method
- 1 Melt butter in a saucepan over medium heat.
- 2 Add lobster meat, salt, pepper, nutmeg, and sherry; simmer for 5 minutes.
- 3 Whisk egg yolks with cream, then stir into the lobster mixture.
- 4 Cook for 2 minutes until thickened, then serve immediately.
