Creamy Lobster Filling

Ingredients

  • 1 cup lobster meat, diced
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • Dash of cayenne
  • 2 egg yolks

Method

  1. 1 Melt butter in a saucepan over medium heat.
  2. 2 Whisk in flour and cook for a few minutes without browning.
  3. 3 Slowly stir in milk and cook until smooth.
  4. 4 Remove from heat and stir in beaten egg yolks.
  5. 5 Add lobster meat, salt, pepper, and cayenne.
  6. 6 Return to heat and stir until thickened, being careful not to break the lobster.
