Creamy Lobster Filling
Ingredients
- 1 cup lobster meat, diced
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk
- 1 teaspoon salt
- ¼ teaspoon pepper
- Dash of cayenne
- 2 egg yolks
Method
- 1 Melt butter in a saucepan over medium heat.
- 2 Whisk in flour and cook for a few minutes without browning.
- 3 Slowly stir in milk and cook until smooth.
- 4 Remove from heat and stir in beaten egg yolks.
- 5 Add lobster meat, salt, pepper, and cayenne.
- 6 Return to heat and stir until thickened, being careful not to break the lobster.
