Creamy Lettuce And Rice Soup

Ingredients

  • 2 heads fresh lettuce
  • ½ small white onion
  • 2 tbsp butter
  • 2 tbsp rice
  • 1 quart milk
  • Salt to taste
  • Dash cayenne pepper
  • ½ tsp sugar
  • 2 tsp butter
  • 1 tsp cornstarch
  • ¼ cup whipped cream
  • Fried croutons (optional)

Method

  1. 1 Wash, drain, and finely chop the lettuce and onion. Melt 2 tbsp butter in a saucepan over medium heat.
  2. 2 Add the chopped vegetables and rice to the butter. Cook for 10 minutes, stirring constantly.
  3. 3 Pour in the milk and bring to a boil. Simmer for 20 minutes until the rice is tender.
  4. 4 Press the mixture through a purée sieve or blender until smooth. Season with salt, cayenne, and sugar.
  5. 5 Whisk 2 tsp butter and 1 tsp cornstarch together. Stir into the soup and heat until it thickens.
  6. 6 Remove from heat and stir in whipped cream. Serve hot with fried croutons if desired.
