Creamy Lettuce And Rice Soup
Ingredients
- 2 heads fresh lettuce
- ½ small white onion
- 2 tbsp butter
- 2 tbsp rice
- 1 quart milk
- Salt to taste
- Dash cayenne pepper
- ½ tsp sugar
- 2 tsp butter
- 1 tsp cornstarch
- ¼ cup whipped cream
- Fried croutons (optional)
Method
- 1 Wash, drain, and finely chop the lettuce and onion. Melt 2 tbsp butter in a saucepan over medium heat.
- 2 Add the chopped vegetables and rice to the butter. Cook for 10 minutes, stirring constantly.
- 3 Pour in the milk and bring to a boil. Simmer for 20 minutes until the rice is tender.
- 4 Press the mixture through a purée sieve or blender until smooth. Season with salt, cayenne, and sugar.
- 5 Whisk 2 tsp butter and 1 tsp cornstarch together. Stir into the soup and heat until it thickens.
- 6 Remove from heat and stir in whipped cream. Serve hot with fried croutons if desired.
