Creamy Lemon Stewed Mushrooms

Ingredients

  • 1 lb mushrooms
  • 1 oz butter
  • 1/2 pint water
  • 1/2 teaspoonful herbs
  • 1/8 teaspoon nutmeg
  • pepper and salt to taste
  • juice of 1/2 lemon
  • 1 egg yolk
  • 2 teaspoons cornstarch

Method

  1. 1 Peel and clean mushrooms, washing them in water with a dash of vinegar. Wipe dry.
  2. 2 Combine water, butter, herbs, nutmeg, pepper, and salt in a saucepan. Bring to a simmer.
  3. 3 Add mushrooms and stew for 10 to 15 minutes until tender.
  4. 4 Thicken with cornstarch mixed with a little cold water. Stir in egg yolk and lemon juice. Serve immediately.
