Creamy Lemon Stewed Mushrooms
Ingredients
- 1 lb mushrooms
- 1 oz butter
- 1/2 pint water
- 1/2 teaspoonful herbs
- 1/8 teaspoon nutmeg
- pepper and salt to taste
- juice of 1/2 lemon
- 1 egg yolk
- 2 teaspoons cornstarch
Method
- 1 Peel and clean mushrooms, washing them in water with a dash of vinegar. Wipe dry.
- 2 Combine water, butter, herbs, nutmeg, pepper, and salt in a saucepan. Bring to a simmer.
- 3 Add mushrooms and stew for 10 to 15 minutes until tender.
- 4 Thicken with cornstarch mixed with a little cold water. Stir in egg yolk and lemon juice. Serve immediately.
