Creamy Lemon Garlic Mussels
Ingredients
- 1 lb mussels, cleaned
- 2 tbsp olive oil
- 1 clove garlic, minced
- 1 tbsp fresh parsley, chopped
- Pinch of black pepper
- 1-2 egg yolks
- 1 tbsp lemon juice
- 1 tsp flour
- 1 cup broth
- 2 tbsp mussel cooking liquid
Method
- 1 Rinse mussels in fresh water. In a covered saucepan, heat oil, garlic, parsley, and pepper over medium heat.
- 2 Add mussels to the pan. Cover and shake occasionally until mussels open, about 5-7 minutes. Remove mussels and set aside.
- 3 In a bowl, whisk egg yolks, lemon juice, and flour. Add broth and reserved mussel liquid, whisking until smooth.
- 4 Pour the egg mixture into the saucepan with the remaining liquid. Cook over low heat, stirring constantly, until the sauce thickens into a smooth cream.
- 5 Pour the warm egg sauce over the cooked mussels and serve immediately.
