Creamy Lemon Garlic Mussels

Ingredients

  • 1 lb mussels, cleaned
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • Pinch of black pepper
  • 1-2 egg yolks
  • 1 tbsp lemon juice
  • 1 tsp flour
  • 1 cup broth
  • 2 tbsp mussel cooking liquid

Method

  1. 1 Rinse mussels in fresh water. In a covered saucepan, heat oil, garlic, parsley, and pepper over medium heat.
  2. 2 Add mussels to the pan. Cover and shake occasionally until mussels open, about 5-7 minutes. Remove mussels and set aside.
  3. 3 In a bowl, whisk egg yolks, lemon juice, and flour. Add broth and reserved mussel liquid, whisking until smooth.
  4. 4 Pour the egg mixture into the saucepan with the remaining liquid. Cook over low heat, stirring constantly, until the sauce thickens into a smooth cream.
  5. 5 Pour the warm egg sauce over the cooked mussels and serve immediately.
