Creamy Herb Shredded Cabbage Salad

Ingredients

  • 1/4 cup cabbage, shredded or thinly sliced
  • 1/4 cup carrot, grated or finely sliced
  • 1/4 cup celery, thinly sliced
  • 1/3 tablespoon green pepper, chopped
  • 1/2 teaspoon onion, finely chopped
  • 1/2 cup dill, basil, or parsley
  • 1/2 cup light or low-fat mayonnaise
  • 1 teaspoon non-fat plain yogurt
  • 1/2 teaspoon mustard
  • 1/2 teaspoon lemon juice
  • sugar to taste

Method

  1. 1 Wash and prepare vegetables. Use a cheese grater or sharp knife to shred cabbage, grate carrot, and slice celery, green pepper, and onion thinly.
  2. 2 Place all prepared vegetables in a large bowl. Add fresh herbs (dill, basil, or parsley) to taste.
  3. 3 In a small bowl, whisk together mayonnaise, yogurt, mustard, lemon juice, and sugar until blended.
