Creamy Herb Shredded Cabbage Salad
Ingredients
- 1/4 cup cabbage, shredded or thinly sliced
- 1/4 cup carrot, grated or finely sliced
- 1/4 cup celery, thinly sliced
- 1/3 tablespoon green pepper, chopped
- 1/2 teaspoon onion, finely chopped
- 1/2 cup dill, basil, or parsley
- 1/2 cup light or low-fat mayonnaise
- 1 teaspoon non-fat plain yogurt
- 1/2 teaspoon mustard
- 1/2 teaspoon lemon juice
- sugar to taste
Method
- 1 Wash and prepare vegetables. Use a cheese grater or sharp knife to shred cabbage, grate carrot, and slice celery, green pepper, and onion thinly.
- 2 Place all prepared vegetables in a large bowl. Add fresh herbs (dill, basil, or parsley) to taste.
- 3 In a small bowl, whisk together mayonnaise, yogurt, mustard, lemon juice, and sugar until blended.
- 4 Pour the dressing over the vegetables and toss to coat evenly. Refrigerate until ready to serve.
