Creamy Haricot Bean Soup With Croutons

Ingredients

  • 1 pint haricot beans
  • 1 onion
  • 2 quarts water
  • 1 pint milk
  • 0.5 oz beef dripping
  • Salt and pepper to taste
  • Bread for croutons

Method

  1. 1 Soak the beans overnight in cold water.
  2. 2 Boil the beans with the onion, dripping, pepper, salt, and 3 pints of water for 3 to 4 hours until very soft.
  3. 3 Rub the cooked beans and liquid through a wire sieve.
  4. 4 Stir in the milk and heat the soup over the fire until it boils.
  5. 5 Serve with fried bread croutons.
