Creamy Haricot Bean Soup With Croutons
Ingredients
- 1 pint haricot beans
- 1 onion
- 2 quarts water
- 1 pint milk
- 0.5 oz beef dripping
- Salt and pepper to taste
- Bread for croutons
Method
- 1 Soak the beans overnight in cold water.
- 2 Boil the beans with the onion, dripping, pepper, salt, and 3 pints of water for 3 to 4 hours until very soft.
- 3 Rub the cooked beans and liquid through a wire sieve.
- 4 Stir in the milk and heat the soup over the fire until it boils.
- 5 Serve with fried bread croutons.
