Creamy Haricot Bean And Root Vegetable Soup

Ingredients

  • 1 lb haricot beans
  • 1/2 lb onions
  • 1 lb turnips
  • 2 carrots
  • 2 stalks celery
  • 1 tsp mixed herbs
  • 1/2 oz parsley
  • 1 oz butter
  • 2 quarts water
  • salt and pepper to taste

Method

  1. 1 Soak haricot beans in cold water overnight.
  2. 2 Cut up vegetables and place in a pot with beans, water, butter, herbs, salt, and pepper.
  3. 3 Cook gently for 3.5 to 4 hours, stirring occasionally, until beans are tender.
  4. 4 Rub the soup through a sieve, adding more water if needed.
  5. 5 Return to saucepan, stir in chopped parsley, boil briefly, and serve.
