Creamy Haricot Bean And Root Vegetable Soup
Ingredients
- 1 lb haricot beans
- 1/2 lb onions
- 1 lb turnips
- 2 carrots
- 2 stalks celery
- 1 tsp mixed herbs
- 1/2 oz parsley
- 1 oz butter
- 2 quarts water
- salt and pepper to taste
Method
- 1 Soak haricot beans in cold water overnight.
- 2 Cut up vegetables and place in a pot with beans, water, butter, herbs, salt, and pepper.
- 3 Cook gently for 3.5 to 4 hours, stirring occasionally, until beans are tender.
- 4 Rub the soup through a sieve, adding more water if needed.
- 5 Return to saucepan, stir in chopped parsley, boil briefly, and serve.
