Creamy Green Pea Soup With Turnips And Carrots
Ingredients
- 1 pint green peas
- 1/2 white onion
- 1 heaping tablespoon butter
- 1 small tablespoon flour
- 1 heaping tablespoon turnips, diced
- 2 tablespoons carrots, diced
- 1/2 teaspoon sugar
- Salt and pepper to taste
- Milk, as needed
- 1 teaspoon finely minced parsley
Method
- 1 Set aside 2 heaping tablespoons of the green peas.
- 2 Boil the remaining peas with half an onion in water until tender.
- 3 Mash the cooked peas and onion through a sieve, adding more water if needed to extract all the flavor.
- 4 Return the pea purée to the stove and stir in butter rubbed with flour.
- 5 Add diced turnips and carrots (cooked separately in minimal water) and the reserved peas.
- 6 Season with sugar, salt, and pepper, then simmer.
- 7 Slowly stir in hot milk until the soup reaches the desired consistency.
- 8 Stir in minced parsley and serve immediately.
