  • 4 cups green peas
  • 1 onion
  • 1 small bunch parsley
  • 2 sprigs mint
  • Salted water
  • 1 cup veal stock
  • Salt, pepper, and sugar to taste
  • 1 tablespoon butter
  • 1 tablespoon flour
  • Croutons for serving

Method

  1. 1 Boil the green peas in salted water with the onion, parsley, and mint until tender.
  2. 2 Rub the cooked peas and vegetables through a colander to create a smooth puree.
