Creamy Green Pea Soup With Croutons
Ingredients
- 4 cups green peas
- 1 onion
- 1 small bunch parsley
- 2 sprigs mint
- Salted water
- 1 cup veal stock
- Salt, pepper, and sugar to taste
- 1 tablespoon butter
- 1 tablespoon flour
- Croutons for serving
Method
- 1 Boil the green peas in salted water with the onion, parsley, and mint until tender.
- 2 Rub the cooked peas and vegetables through a colander to create a smooth puree.
- 3 Reheat the puree and stir in the veal stock.
- 4 Season with salt, pepper, and sugar. Blend butter and flour into a paste and stir into the boiling soup to thicken.
- 5 Serve hot with croutons.
