Creamy Green Pea And Lettuce Soup
Ingredients
- 1 quart old peas
- 5 quarts water
- 1 onion
- ½ pint young peas
- 2 cabbage lettuces, sliced
- salt and pepper to taste
- 1 small piece butter
- 1 tbsp flour
- 1 tsp loaf sugar
Method
- 1 Boil old peas, onion, and water until peas are soft.
- 2 Work the soft peas through a sieve to create a pulp.
- 3 Return the pea pulp to the boiling water along with young peas and sliced lettuce.
- 4 Simmer for 30 minutes, then season with salt and pepper.
- 5 Stir in butter mixed with flour and sugar before serving.
