Creamy Green Pea And Lettuce Soup

Ingredients

  • 1 quart old peas
  • 5 quarts water
  • 1 onion
  • ½ pint young peas
  • 2 cabbage lettuces, sliced
  • salt and pepper to taste
  • 1 small piece butter
  • 1 tbsp flour
  • 1 tsp loaf sugar

Method

  1. 1 Boil old peas, onion, and water until peas are soft.
  2. 2 Work the soft peas through a sieve to create a pulp.
  3. 3 Return the pea pulp to the boiling water along with young peas and sliced lettuce.
  4. 4 Simmer for 30 minutes, then season with salt and pepper.
  5. 5 Stir in butter mixed with flour and sugar before serving.
