  • 2 spring chickens, cleaned and jointed
  • Butter for frying
  • 6 sweet green peppers, seeded and shredded
  • Salted water
  • 2 cups cream
  • Flour for thickening
  • Butter for thickening

Method

  1. 1 Clean and joint the spring chickens.
  2. 2 Fry the chicken pieces in butter until browned.
  3. 3 Transfer the chicken to the oven and finish cooking.
  4. 4 Seed and shred the sweet peppers, then boil in salted water until soft.
  5. 5 Drain the peppers and add them to the chicken.
  6. 6 Pour over 2 cups of cream and bring to a boil.
  7. 7 Thicken the sauce with a little flour cooked in butter.
  8. 8 Serve immediately.
