Creamy Fricasseed Oysters On Toasted Crackers
Ingredients
- 1 quart large oysters, drained
- ¼ lb butter
- 3 tbsp powdered cracker
- salt and pepper to taste
- ½ pint cream
- toasted crackers for serving
Method
- 1 Drain oysters from their liquor. Place oysters in a covered saucepan with ¼ lb butter.
- 2 Simmer gently on the back of the range until oysters are plumped.
- 3 In a separate saucepan, combine oyster liquor, powdered cracker, and pepper.
- 4 Remove oysters with a fork and place on toasted crackers on a hot platter.
- 5 Add the butter from cooking oysters to the broth. Boil once.
- 6 Stir in cream and pour over the oysters.
