Creamy Fondant Icing

Ingredients

  • 2 1/2 cups sugar
  • 1/4 cup white corn syrup
  • 1/2 cup water
  • 1-2 tablespoons boiling water
  • flavoring of choice

Method

  1. 1 Combine sugar, corn syrup, and water in a saucepan.
  2. 2 Stir to dissolve sugar, then bring to a boil.
  3. 3 Cook until the mixture forms a soft ball in cold water or reaches 240°F on a candy thermometer.
  4. 4 Remove from heat and pour onto a well-greased platter to cool.
  5. 5 Knead with a spatula or spoon until creamy and white, then cover and let rest for 24 hours.
  6. 6 To use, melt in a double boiler, adding flavoring and 1-2 tablespoons of boiling water to reach a spreadable consistency.
