Creamy Fondant Icing
Ingredients
- 2 1/2 cups sugar
- 1/4 cup white corn syrup
- 1/2 cup water
- 1-2 tablespoons boiling water
- flavoring of choice
Method
- 1 Combine sugar, corn syrup, and water in a saucepan.
- 2 Stir to dissolve sugar, then bring to a boil.
- 3 Cook until the mixture forms a soft ball in cold water or reaches 240°F on a candy thermometer.
- 4 Remove from heat and pour onto a well-greased platter to cool.
- 5 Knead with a spatula or spoon until creamy and white, then cover and let rest for 24 hours.
- 6 To use, melt in a double boiler, adding flavoring and 1-2 tablespoons of boiling water to reach a spreadable consistency.
