Creamy Fish Rechauffe
Ingredients
- 1 pint cooked fish, flaked and seasoned
- 1/4 cup butter
- 1/4 cup flour
- 1 cup fish stock
- 1 cup cream and milk combined
- 1/2 teaspoon salt
- 1 teaspoon anchovy paste
- 1/2 teaspoon paprika
- 2 tablespoons oil
- 2 tablespoons lemon juice
- 1 tablespoon chopped parsley
Method
- 1 Marinate the hot flaked fish with salt, pepper, oil, and lemon juice. Add a few drops of onion juice if desired.
- 2 Make a sauce by combining butter, flour, salt, paprika, fish stock, and cream mixture in a pan.
- 3 Stir in the anchovy paste and the marinated fish, heating thoroughly.
- 4 Turn down the heat or set the pan in hot water to keep warm.
- 5 Sprinkle with chopped parsley and serve.
