Creamy Fish Rechauffe

Ingredients

  • 1 pint cooked fish, flaked and seasoned
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup fish stock
  • 1 cup cream and milk combined
  • 1/2 teaspoon salt
  • 1 teaspoon anchovy paste
  • 1/2 teaspoon paprika
  • 2 tablespoons oil
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped parsley

Method

  1. 1 Marinate the hot flaked fish with salt, pepper, oil, and lemon juice. Add a few drops of onion juice if desired.
  2. 2 Make a sauce by combining butter, flour, salt, paprika, fish stock, and cream mixture in a pan.
  3. 3 Stir in the anchovy paste and the marinated fish, heating thoroughly.
  4. 4 Turn down the heat or set the pan in hot water to keep warm.
  5. 5 Sprinkle with chopped parsley and serve.
