Creamy Egg Thickened Potato Fricassee

Ingredients

  • 1 tbsp butter
  • 1 cup milk
  • 2 cups cold potatoes, diced
  • Salt and pepper to taste
  • A few drops onion juice
  • 2 egg yolks, beaten
  • Finely minced parsley

Method

  1. 1 Melt butter in a skillet over medium heat. Add milk and heat until hot.
  2. 2 Add diced cold potatoes, salt, pepper, and onion juice. Heat thoroughly.
  3. 3 Stir in beaten egg yolks constantly until the mixture thickens. Do not overcook.
  4. 4 Pour into a serving dish, sprinkle with minced parsley, and serve immediately.
