Creamy Egg Thickened Potato Fricassee
Ingredients
- 1 tbsp butter
- 1 cup milk
- 2 cups cold potatoes, diced
- Salt and pepper to taste
- A few drops onion juice
- 2 egg yolks, beaten
- Finely minced parsley
Method
- 1 Melt butter in a skillet over medium heat. Add milk and heat until hot.
- 2 Add diced cold potatoes, salt, pepper, and onion juice. Heat thoroughly.
- 3 Stir in beaten egg yolks constantly until the mixture thickens. Do not overcook.
- 4 Pour into a serving dish, sprinkle with minced parsley, and serve immediately.
