Creamy Egg Sauce Over Toast

Ingredients

  • 1 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • salt and pepper to taste
  • hard-boiled eggs, coarsely chopped
  • toast
  • chopped parsley

Method

  1. 1 Melt butter in a saucepan over medium heat. Whisk in flour to form a roux.
  2. 2 Gradually whisk in milk. Cook, stirring constantly, until the sauce thickens and becomes creamy. Season with salt and pepper.
  3. 3 Add chopped hard-boiled eggs to the sauce and heat through.
  4. 4 Serve immediately over toast and sprinkle with chopped parsley.
