Creamy Curried Oysters On Toast

Ingredients

  • 1 tablespoon butter
  • 1 teaspoon chopped onion
  • 1 tablespoon flour
  • 1 teaspoon curry powder
  • 1 cup cream
  • Salt and pepper to taste
  • 1 quart oysters with their liquor

Method

  1. 1 Melt butter in a saucepan and fry chopped onion until brown.
  2. 2 Stir in flour and curry powder; cook until mixture leaves sides of pan.
  3. 3 Add cream, salt, and pepper; stir constantly until sauce thickens.
  4. 4 Add oysters with their liquor and cook slowly until edges curl.
  5. 5 Serve on toast.
