Creamy Cucumber Stuffed Tomatoes
Ingredients
- 5 tomatoes
- 1 cucumber, chilled
- 1 cup cream dressing
- Salt and pepper to taste
- 1 pimento, chopped (optional)
- 2 tablespoonfuls grated horseradish (optional)
- Lettuce leaves for serving
Method
- 1 Peel tomatoes, cut off stem ends, and scoop out pulp to form cups. Place upside down in a cool place.
- 2 Chop the tomato pulp and cucumber finely. Stir into the cream dressing along with salt and pepper.
- 3 Optionally add chopped pimento or grated horseradish to the mixture.
- 4 Fill the tomato cups with the cucumber mixture and serve immediately on lettuce leaves.
