Creamy Crab And Tomato Stew
Ingredients
- 1 crab, shredded
- 1 good-sized onion, chopped
- 1 chili pepper or pinch of cayenne
- 1 tablespoon butter
- 2 tablespoons water
- 1/2 can tomatoes
- 1/2 cup cream
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Toast for serving
Method
- 1 Shred the crab meat. Chop the onion and chili pepper.
- 2 Place onion, chili, and 2 tablespoons water in a pan. Boil briskly for 15 minutes.
- 3 Add tomatoes and boil for 10 minutes until soft. Strain the mixture, returning the juice to the pan.
- 4 Add butter, salt, and pepper to the juice. Thicken with cornstarch.
- 5 Stir in the crab and cream. Heat through and serve with toast.
