Creamy Crab And Tomato Stew

Ingredients

  • 1 crab, shredded
  • 1 good-sized onion, chopped
  • 1 chili pepper or pinch of cayenne
  • 1 tablespoon butter
  • 2 tablespoons water
  • 1/2 can tomatoes
  • 1/2 cup cream
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Toast for serving

Method

  1. 1 Shred the crab meat. Chop the onion and chili pepper.
  2. 2 Place onion, chili, and 2 tablespoons water in a pan. Boil briskly for 15 minutes.
  3. 3 Add tomatoes and boil for 10 minutes until soft. Strain the mixture, returning the juice to the pan.
  4. 4 Add butter, salt, and pepper to the juice. Thicken with cornstarch.
  5. 5 Stir in the crab and cream. Heat through and serve with toast.
