Creamy Corn And Onion Soup
Ingredients
- 2 tablespoons butter
- 1 onion, cut fine
- 1 sprig parsley, cut fine
- 1 cup chopped corn
- 1 cup hot water
- ½ teaspoon beef extract
- Salt and pepper to taste
- 1 cup milk
- 2 tablespoons flour
- 2 tablespoons butter
- Toasted croutons for serving
Method
- 1 Melt 2 tablespoons butter in a pot. Add the cut onion and parsley, cooking for 5 minutes until softened.
- 2 Stir in the chopped corn and hot water. Dissolve the beef extract into the water before adding. Cook for 15 minutes.
- 3 Season with salt and pepper. Stir in the milk.
- 4 Blend the flour and 2 tablespoons of butter together to form a paste. Stir this into the soup to thicken it.
- 5 Serve hot with toasted croutons on top.
