Creamy Codfish And Parsley Over Toast

  • 1 cup shredded salt codfish, bones removed
  • Boiling water (for soaking)
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 1 tsp finely minced parsley
  • Toast, for serving
  • 1 hard-boiled egg, sliced
  • Black pepper

Method

  1. 1 Place shredded codfish in a bowl. Pour boiling water over it to cover. Let cool, then drain.
  2. 2 Repeat the boiling water soak and drain process once more to remove excess salt.
  3. 3 In a saucepan, melt butter and whisk in flour. Cook for 1 minute, then whisk in milk.
  4. 4 Cook, stirring constantly, until the sauce thickens. Stir in the drained codfish and parsley.
  5. 5 Serve the mixture over toast. Garnish with sliced hard-boiled egg and black pepper.
