Creamy Codfish And Parsley Over Toast
Ingredients
- 1 cup shredded salt codfish, bones removed
- Boiling water (for soaking)
- 1 tbsp butter
- 1 tbsp flour
- 1 cup milk
- 1 tsp finely minced parsley
- Toast, for serving
- 1 hard-boiled egg, sliced
- Black pepper
Method
- 1 Place shredded codfish in a bowl. Pour boiling water over it to cover. Let cool, then drain.
- 2 Repeat the boiling water soak and drain process once more to remove excess salt.
- 3 In a saucepan, melt butter and whisk in flour. Cook for 1 minute, then whisk in milk.
- 4 Cook, stirring constantly, until the sauce thickens. Stir in the drained codfish and parsley.
- 5 Serve the mixture over toast. Garnish with sliced hard-boiled egg and black pepper.
